Chef Ederique Goudia Inaugurates the Ruby Cole Community Kitchen

Chef Activist & Foodservice Consultant, Ederique Goudia, prepared a vegetable coconut curry for guests at the Grand Opening and Ribbon Cutting Ceremony for the Ruby Cole Community Kitchen located at the Popoff Family Health Center. Chef Goudia chose to incorporate an eggplant as one of the ingredients for the meal because she says it is one of the many healthy vegetable options that people in our community don’t use enough. This touches on one her goals, which is to help expand and enrich the palate of people, especially those living in underserved communities that have low access to healthy and quality foods, areas referred to as “food desserts.” See the recipe for the flavorful meal that Chef Goudia prepared below.
