The New ‘Ruby Cole Community Kitchen’

Authority Health Dedicates Community Demonstration Kitchen

and Expansion at Popoff Family Health Center

DETROIT — Authority Health will dedicate a community demonstration kitchen and expansion of Popoff Family Health Center on Wednesday, Sept. 27, at 2 p.m. The expansion project was made possible through a $450,000 grant from the Priority Health Total Health Foundation.

“We believe that food can be used to prevent chronic diseases and can be used as part of the healing process. Nutrition is at the heart of our efforts to promote a healthy community,” said Loretta V. Bush, president & CEO of Authority Health. “We are grateful to the Priority Health Total Health Foundation for its generous grant that will allow us to provide this community resource to promote education in healthy cooking skills and nutrition.”

The community demonstration kitchen will have sit-down space for 35 people. Health and human service organizations, including community groups, will be offered an opportunity to provide programs, such as cooking classes and nutrition education at the site throughout the year. The expansion project also includes two new clinical therapy rooms.

Ederique Goudia, a noted Detroit chef who combines an interest in culinary arts with community-based nutrition, will be a special feature of the dedication. She will talk about her work and offer dignitaries a sampling of a nutritious creation.

The facility will be formally named the Rube Cole Community Kitchen, in honor of the prominent Detroiter who has worked for Total Health Care and serves on the Priority Health Total Health Foundation.

“Food is an important part of the wellness journey,” said Shannon Wilson, vice president of Population Health and Health Equity for Priority Health. “The Priority Health Total Health Foundation is honored to name this kitchen after a lifelong Detroiter, who continues to advocate for the wellness of the city at the age of 100.  Her tireless efforts embody the spirit of this kitchen which will offer a space to learn, grow, and create the next generation of healthy Detroiters.”
